Ultimate Kale Salad

Ingredients:

This is more of a guideline than a recipe. Three main parts that “make” this salad, The base, Veggies and Herbs, the other categories can be omitted if desired and you’ll still end up with a great salad.

The Base:

4 cups of baby kale or 1 bunch (6-9 leaves) curly kale

1 cup mixed baby salad greens

Crunch Veggies:

1 rib celery, diced

½ red, yellow or orange pepper, diced

Fresh Herbs:

½ cup of at least 2 types of coarsely chopped fresh herbs.

Dill, basil, mint, flat leaf parsley and cilantro

Crucifers:

2 cups total of any of the following (or any combination):

Finely shredded white or purple cabbage

Broccoli

Cauliflower

Fruit:

1 apple or pear, cored and diced; or 1 cup fresh blueberries or strawberries

Other add-ins – all optional:

½ fennel bulb, sliced thin

4-6 radishes, sliced in half-moons

1/3 cucumber, sliced in half-moons

Handful of grape or cherry tomatoes, cut in half

Dressing:

½ tsp fine sea salt

1 Tbsp – ¼ cup organic extra virgin olive oil

Juice of ½ lemon, to your taste
