-1 tablespoon extra-virgin olive oil
-5 cloves garlic, sliced
-½ yellow bell pepper sliced into medium sized squares
-1 zucchini, halved and sliced into half-moons
-1 cup halved red grape tomatoes
-1 cup halved yellow grape tomatoes
-1/2 teaspoon sea salt
-1/2 teaspoon ground black pepper
-2 tablespoons chopped fresh oregano


In a large skillet, heat olive oil over medium-high heat. Add garlic and cook, stirring frequently, until fragrant, about 30 seconds. Add bell pepper, zucchini, salt and pepper and cook, stirring occasionally, until vegetables begin to soften, about 3 minutes. Stir in the red and yellow tomatoes and continue cooking just until vegetables are tender and begin to release their liquid, about 3 more minutes. Remove from heat and stir in the oregano.
