1 tsp Olive Oil
1 ½ cups chopped onion
2 cups apple wedges (use firm apples like Fuji, gala)
2 tsp Coconut Oil
2 tsp fresh thyme leaves
¼ tsp sea salt
¼ tsp fresh ground pepper
Preheat oven to 400°.
Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan; swirl to coat.
Add onions to pan; cook 2 minutes or until lightly browned, stirring occasionally.
Add apples to pan; place in oven. Bake at 400° for 10 minutes or until onions and apple are tender. Remove from oven. Stir in 2 teaspoons of coconut oil, thyme, salt and pepper.
