Italian Beef Soup

Servings: 6 to 8 1 cup servings

This is a great soup for dinner or make ahead and pack for lunch.


1 lb                  Lean Ground Beef

4                      Cloves Garlic Minced

1 med              Yellow or White Onion Chopped

1 lb                  Zucchini – Sliced in ¼ in rounds then quartered

2 Tbls              Olive Oil

1 Tbls              Italian Seasoning

¼ cup              Fresh Basil chipped

1 tsp                Sea Salt

1 (28 oz) can   Diced Organic Tomatoes

4 cups             Organic Beef Broth

4 cups             Fresh Baby Spinach – stems removed and chopped


Brown ground beef and garlic in a skillet. When done drain any grease. Set aside.

In Dutch oven heat olive oil on medium high. Add onions; cook for 5 minutes stirring often.

Add zucchini, Italian seasoning, basil and sea salt. Stir, cook 5 minutes stirring often.

Add tomatoes, broth and cooked ground beef.

Bring just to a boil then turn down to low and simmer 15 minutes.

Stir in spinach.

Spoon into bowls.
