Fish Chowder

Fish ChowderDifficulty: Easy

Servings: 4-6

 

 

Ingredients:

-One pound white fish (cod, halibut, tuna or sea bass)

-3Tbsp. Olive oil

-1 Whole white onion; chopped

-4 Cloves Garlic; minced

-1 Stalk Celery; chopped

-½ Cup Turnips; Cubed

-2 Cups Water

-2 Fresh Tomatoes; Diced

-1 Bay Leaf

-½ tsp. Sea Salt

-1 Vegetable Bouillon Cube

-½ tsp. ground black pepper

-1/3 tsp. Red Chili Flakes (optional)

-1/3 cup Parsley; chopped

-½ tsp. Dried Thyme or 1 Tbsp. fresh chopped thyme

Directions:

Heat olive oil in a medium sauce pan over medium heat; cook the onion, garlic, bay leaf and sprinkle red pepper flakes. Stir until lightly browned, about 5 minutes. Add and stir in water, vegetable bouillon, tomatoes, celery, thyme, turnips, sea salt and pepper. Bring to boil for 20minutes. Add fish. Cover and simmer 15 minutes or until fish flakes easily. Add parsley for garnish.
