Cauliflower “Rice”

This is the best dish to make in place of rice. Any dish you make that you normally put over rice or noodles this is perfect for such as stir-fry’s or try the Chicken Paprikash dish on the web site, it’s great together!

Ingredients:

1 head of Cauliflower (or less if for less people)

Directions:

Cut up Cauliflower in to pieces, discarding the leaves and core.

Place in bowl of food processor with steel blade or the shredder blade.**

Pulse the Cauliflower until it looks like small pieces of rice.

Put the Cauliflower into a microwavable covered dish. DO NOT ADD WATER. Cauliflower absorbs water like crazy, and the “granules” will become gummy. To keep it fluffy, just let the moisture in the cauliflower do its work.

Microwave on high for 4 to 5 minutes.

If you are not using with a dish that is saucy, add a little coconut oil and sea salt and pepper.

** If you do not have a food processor, you can shred it with a hand-held grater, or even use a knife, you just need to chop until the pieces are very small.
