-5 oz. assorted green leaf lettuces
-2 oz. baby spinach leafs
-5 orange segments
-5 grapefruit segments
-1/4 cup Granny Smith apple, julienne
-2/3 cup cooked lobster/crab/shrimp meat
-1 strawberry, sliced
-Fresh chives, chopped (to garnish)
-1/3 cup of olive oil/vinegar dressing


With a knife remove skin from orange and grapefruit and carve segments. Cut Granny Smith apple into a fine julienne and add to the orange and grapefruit segments. Wash and dry green leaf lettuces and baby spinach. Cut cooked lobster meat into small dices; claws and tails. Layer ingredients starting with green lettuces on the bottom of the plate with baby spinach on top. Add orange, grapefruit and apple mixture. Place lobster meat on top of the salad. Garnish salad with sliced fresh strawberries and then sprinkle plate with fresh chopped chives.  Serve with extra virgin olive oil and white wine vinegar.
