Chicken Taco Salad

-3.5 ounces chicken breast

-2 tbsp extra virgin olive oil

-1 tbsp chopped onion

-1 garlic clove, chopped

-1/8 tsp oregano

-pinch cumin

-cayenne pepper to taste

-1 cup chopped cilantro

-1 cup chopped lettuce leaves

-1 lemon, juiced


Grease frying pan with extra virgin olive oil and cook diced chicken.  Slowly add onion, garlic, cilantro, and spices.  Deglaze pan with lemon juice.  Serve with chopped lettuce leaves and top off with some of our salsa roja or pico de gallo!
