Squash with Shrimp

Squash with ShrimpDifficulty: Easy

-1 spaghetti squash

-1 1/2 pound shrimp, peeled and deveined

-1/2 tsp cayenne pepper

-1 onion, chopped

-6 cloves of garlic, chopped

-1/4 cup parsley, finely chopped

-1/4 cup green onions, finely chopped


Preheat oven to 350. Cut squash in half lengthwise, scoop out seeds.  Arrange squash in 9×13 glass dish, cut side down, pour 1/2 cup water in dish and bake until tender, approximately 45 minutes. Let squash cool, using a fork, rake out squash like spaghetti, set aside.  On the stove top saute seasonings in olive oil, then add shrimp.  Cook until shrimp are pink.  Add spaghetti squash to shrimp mixture and mix gently.  Salt & pepper to taste.

Options: This is also a great stuffing for bell peppers
