– 1-2 pound roasting chicken

-4 tsp Sea salt

-2 tsp Paprika

-1 tsp Cayenne Pepper

-1 tsp Thyme

-1 tsp dried Rosemary leaves

-1 tsp dried Onion powder

-1 tsp White Pepper

-½ tsp Garlic powder

-½ tsp Black Pepper

-2 Onions, quartered

-2 Garlic cloves

-6 sprigs of Rosemary


Mix all dry ingredients together, rub chicken with dry rub then stuff cavity with onions, garlic and rosemary. Place in a roasting bag and put in fridge overnight. Bake next day at 250* for 5 hours.
