Time: 15 minutes
1 egg; beaten
1 cup grated apple
2 packets of stevia
2 Tbsp flax seed meal
1 Tbsp chia seeds
Mix all ingredients in a bowl t make a batter.
Heat Coconut oil on griddle or skillet on medium high.
Spoon batter onto griddle into four separate pancakes. Cook for about 2 minutes, flip and cook another 2 minutes.
Serve 2 pancakes per person. If desired, top with heated frozen organic blueberries for topping.
Make sure you watch your fruit count for the day.
