-½ pounds of fresh, peeled large shrimp

-Jalapeño pepper, seeded and roughly chopped

-¼ cup of fresh lime juice, from 3-4 limes, plus the grated zest of one lime

-1 clove of garlic, peeled and roughly chopped

-1 tsp chili powder (or to taste)

-1 tsp salt

-½ Tbsp olive oil


Place everything but the shrimp into a blender, and blend until you have a uniform marinade.  Place the marinade in a large plastic zip-top bag with the shrimp and set aside at room temperature for half an hour.  Note: lime juice (or other acids) act as a cooking agent in the marinade, so leaving the shrimp in the marinade for longer will cause them to be tough and rubbery when cooked. In the meantime, bring a grill to high heat. Grill shrimp until just cooked through, around 2-3 minutes per side.
