1 Tbls olive oil

1 ½ tsp ground coriander

½ tsp sea salt

½ tsp ground cumin

¼ tsp chili powder

1/8 tsp ground cinnamon

1/8 tsp fresh ground black pepper

4 (6 oz) skinless, boneless chicken breast halves, cubed


2 cups cherry or grape tomatoes, halved

¼ cup sliced green onion tops

2 Tbls thinly sliced fresh basil

1 Tbls balsamic vinegar

1 tsp olive oil

¼ tsp sea salt

1/8 tsp fresh ground black pepper


Chicken: Combine coriander and the next 5 ingredients (through black pepper) in a small bowl. Toss the chicken cubes with the spices, coating evenly.

Heat 1 Tbsp oil in a large nonstick skillet over medium-heat. Add chicken to pan, cook 5 to 10 minutes sautéing until cooked through and browned.

Salad: combine tomatoes and remaining ingredients, tossing well.

Place on place plates, top with chicken. Serve with steam broccoli or green beans.
