Roasted Edamame

Roasted EdamameDifficulty: Easy

Time: 25 minutes

Servings: Makes roughly 2 cups

 

Ingredients:

1 16 oz frozen cooked edamame (I got mine at Trader Joes), thawed

2 tsp extra-virgin olive oil

1 tsp sea salt

½ tsp freshly ground black pepper

Directions:

Preheat oven to 375°.

In a large bowl, toss the edamame with the olive oil, salt and pepper.

Spread the edamame in a single layer on a sheet pan and roast for 20 minutes, stir after 10 minutes.

Remove the pan from the oven and transfer to a bowl to serve. Place an empty bowl next to for the shells.

Experiment with different seasonings.
